Banana Cake


  • Half kg ripe bananas,
  • 20 gm. bicarbonate of soda,
  • One kg home baking flour,
  • 5 table spoons baking powder,
  • 200 ml cooking oil
  • 200 gm. sugar,
  • 10 pcs eggs
  • Half litre milk for consistency.

Number of portions: 20


  • Pre-heat oven to 275⁰C and prepare a baking tin. In a small bowl, mix mashed bananas with bicarbonate of soda and set aside. In a medium bowl - mix flour, baking powder, and set aside.
  • In a large bowl, cream the banana mixture with sugar until light and fluffy. Add liquid oil and continue mixing for a while. Beat in eggs one at a time. Beat in the flour mixture alternatively with the milk.
  • Pour the content in to prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
  • Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist.

Finally invert it on a dish, portion and serve it accordingly.

N/B Banana cake can be served as a desert or an accompaniment for tea/coffee.
